Dinner Is Served



Monday February 3

Last Tuesday, Jim, the fellow who actually lives here (October 19 Post), came back into town to fulfill a catering commitment

We did our best to make him feel welcome


Jim's catering gig was Saturday evening so he prepped all week, catered the event, spent Sunday recovering and went back to Whistler today. He stayed with Wendle and I for the full six days. We had a blast and it gave him plenty of time to make up with Miss Frida (who was quite displeased with him for leaving in the first place)

Jim is a senior chef at the 'Rimrock Cafe' in Whistler and Wendy was thrilled that he asked her to be his assistant again. If you're into cooking, working with and learning from a full-on, top chef is very cool

Neither Wendy nor I had ever heard of the Rimrock before we met Jim…mainly because we haven't been to Whistler…yet (doesn't mr. slate eat at the rimrock?)

The cafe has a great reputation for fine wining and dining (Jim says that they can pretty much create what you want, how you want it). If you're heading to Whistler, drop in and give them a try. All week, Jim and Wendle were busy preparing

At the event Saturday, Jim served up three hors d'oeuvres, lobster bisque, filet mignon, smashed potatoes (that's 'smashed not mashed' potatoes) and vegetable bundles to 170 people (good gawd amighty)


And then dished out 170 orders of cheesecake with a drizzle of sauce and a side of whipped cream (it was so good)


Over dinner one night, Jim explained to us the intricacies of a Molinillo

What is a Molinillo?

Well, a Molinillo (moh-lee-NEE-yoh) is a Mexican Chocolate Whisk made of turned wood (http://www.gourmetsleuth.com/Articles/Unique-Cooking-Tools-641/molinillo.aspx)


To operate the device, place the Molinillo between your palms and rub your hands back and forth. As you do, the Molinillo rotates, frothing the cocoa


The whole story of chocolate is amazing. We won't write more about it until we get our facts straight…but you can bet we are thoroughly researching the subject


One thing I've really missed out here on BC's Sunshine Coast is the sight of kids playing pickup basketball or street hockey. Don't get me wrong, the kids here are very active, they just don't seem much interested in basketball or street hockey. Once, Wendle and I saw a basketball that had been left on an outside court. We passed by it several times throughout the day and it was never moved…no one picked it up…no one stole it

That's why I was so surprised the other day when Der Wendle came home with this very cool pic of kids playing road hockey on the huge parking lot, at the Ferry Landing in Gibsons


We totally forgot to show you the great picture Wendle took the other day as we drove down from Dakota Ridge after our shift. The end of the grass in the foreground, is also the edge…and beyond that…an ocean of clouds below

That's it for today…we've got things to do. We really do have a lot on our plates and as soon as we can wrap it up, I'll be allowed to tell you all about it…in the meantime, I am sworn to secrecy (but i'm terrible at keeping secrets Wendle)
